Sloppy Joes for the Trail

Camp Cooking Recipe: Sloppy Joes

This might come as a shocker, but sloppy joes don't have to come from a can. In fact, they're so much better when they're made from scratch, and it's really not that hard to whip them up in your camp kitchen. 

These sloppy joes are quick and easy to make, which means you won't have to wait too long to satisfy your hunger at the end of a day on the trail. And, because this is a one-pot meal, once you're done eating, clean up is a breeze and you can get to relaxing around the campfire that much sooner. 

Ingredients

  • 1 pound extra-lean ground beef 
  • 1 small white onion, diced 
  • 4 cloves garlic, minced 
  • 1 jalapeno, minced 1 red pepper, diced 
  • 1 can  kidney  or pinto beans,  drained and rinsed 
  • 1 1/2 cups tomato sauce 
  • 2 tablespoons tomato paste 
  • 1 tablespoon red wine vinegar 
  • 1 tablespoon molasses 
  • 1 tablespoon Worcestershire sauce 
  • 1 teaspoon mustard powder 1 teaspoon garlic powder 
  • 3/4 teaspoon salt 
  • Freshly ground black pepper 
  • 8 whole-wheat burger buns

Directions

Brown the meat in a large skillet over medium-high heat for 5 minutes, breaking up the meat as it cooks. 

Add the onion and continue cooking until meat is no longer pink. 

Add the garlic, jalapeno, and red pepper and cook 5 minutes more, stirring occasionally. 

Stir in the rest of the ingredients, reduce heat to low, and simmer for 5 minutes more, or until mixture thickens slightly. 

Scoop the mixture onto each bun and serve.
