Camp Cooking Recipes: Blondies

I have to admit, I've been a bit obsessed with my newfound ability to bake at camp. It's truly been a game changer for how we eat on the trail. Muffins, calzone, monkey bread, and now...blondies!

I recently made this family favorite recipe during a cooking demonstration at Overland Expo Mountain West and I was surprised to discover how many people had never heard of a blondie! 

To be honest, I'm not entirely sure about their origin but my mom made them for me when I was kid and I've been making them for my family for years. 

So, what is a blondie? It's very much like a brownie in consistency and texture, but there's not chocolate in the batter. Most recipes call for brown sugar, but the recipe I have uses molasses, which I think gives these sweet treats a rich, chewy texture. 

Like brownies, you can add in nuts, different baking chips or morsels, or whatever floats your boat. We like to add white chocolate chips and chopped up Heath Bars, but this is where you can get creative and make these delicious dessert bars your own. Sprinkles? Chopped peanut butter cups? Dried fruit? The sky's the limit!

These are pretty easy to whip up at camp and, from start to finish, take about an hour...but most of that time is baking, so you can relax and enjoy the good smells as the sweet aroma of baking fills the air. 

Please note that this recipe does require an Omnia stovetop oven, which is currently one of my favorite camp cooking tools. 

Ingredients

  • 1/2 cup unsalted butter, plus more for greasing pan 
  • 1/2 cup sugar 1 tablespoon molasses 
  • 1 1/3 cups flour 
  • 1/4 teaspoon baking powder 
  • 1/4 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 1 egg, lightly beaten 
  • 1/3 cup white chocolate chips (chocolate chips are good too) 
  • 1/4 cup (= 2 small bars) coarsely chopped Heath Bar (optional) 
  • 1/2 cup pecans, coarsely chopped (optional)

Directions

  • Place silicon insert into your Omnia stovetop oven and set aside. 
  • In a medium saucepan, melt 1/2 cup butter. 
  • When hot, stir in sugar and molasses and transfer to a large bowl to cool. 
  • In a medium bowl, combine flour, baking powder, baking soda, and salt. 
  • When butter mixture is cool, whisk in egg until slightly fluffy. 
  • Mix in the flour mixture until just combined, then fold in white chocolate chips, Heath Bar and pecans. (Note: the batter will be very thick.) 
  • Gently press the batter into the prepared pan. 
  • Bake until golden and a toothpick inserted into the middle comes out clean, 25 to 30 minutes. 
  • Cool before cutting. 
  • Enjoy!
